LITHEO Company and its people decided -through an integrated and holistic approach- to reinvent and deliver Greek Olive Oil to its full potential, with a product philosophy matching the essential characteristics of the Exquisite Greek Olive Oil. LITEHO carefully matched innovation with absolute control of every single quality detail of the production process to create the Finest of Products. LITHEO packaged the product in a bottle that speaks about Olive Oil as it is, Pure, Minimal, Delicate, Luxurious and finally delivered O2, an Organic, Extra Virgin, early picked, daily cold pressed Olive Oil, from Greece at its best. LITHEO Company supervises the organic cultivation of specially chosen, long standing Olive groves in Naupaktia region of central Greece. LITHEO Olive trees are a blend of “Koroneiki” variety and “Koutsourelia” local variety (local Ladoelia), only to be found in Naupaktia region. What is special about LITHEO's Olives and Olive Oil is that due to the local variety blend (Koroneiki & Koutsourelia), O2 Olive Oil is very mild to the senses even though it is an early picked Olive Oil (Agourelaio). Traditionally, the region produces one of the finest Olive Oils in Greece, with extremely low acidity (0.1-0.3%), unique color and a balanced taste of mild fruity elements. Starting at 2011, LITHEO Company launched a pioneering practice in the extraction and production of O2 Olive Oil, matching the uniqueness of the local blend with an extremely careful production process.

O2 the main olive oil product of LITHEO is a Premium Organic Extra Virgin Olive Oil, of innovative design and unique production process, from Naupaktia region in central Greece. Having quality at the forefront of LITHEO's vision, which brings a product of unparallel value from small, family owned organic cultivated groves, with taste and chemical characteristics certified and detailed on every year’s harvest. Carefully picked unripe olives are cold pressed directly after picking two times a day, in a dual phase organic certified press mill. O2 is stored in ideal conditions right afterwards, and hand bottled only upon demand. Nutritionally lavish, at the intersection of food and medicine, O2 Agourelaio from Koutsourelia (local Ladoelia) and Koroneiki varieties, is a medium fruity Olive Oil with its aromas becoming clearer and more distinct as time passes. Recently, selected parts of the region were certified as organic cultivation under transition, whereby all cultivation practices from there on, comply wholly with the requirements of the European Organic Cultivation Certification Standards. Starting with the Harvest of 2012 (November – December), LITHEO company has decided to promote an innovative practice in the extraction and production of Olive Oil from its organic certified groves. More specifically, starting with the hand picking of Olives from specially trained personnel along with the use of light machinery so as to preserve the olives’ excellent condition to its fullest, the fruits are handled and gathered in burlap sacks. Directly afterwards, the olives are pressed in an ISO Organic certified dual phase Olive Oil mill (totally cold extraction process) two times a day. Therefore LITHEO's Olive Oil is extracted at a maximum of three hours time after picking. The usage of water is limited only to washing the olives before extraction. By minimizing the amount of water required and lowering the temperature of extraction (less than 25 C) LITHEO is able to preserve much of the natural antioxidants (Polyphenols) present in Olive Oil. This innovative method of production guarantees the finest quality of Olive Oil with ultra low acidity and even more importantly, gives LITHEO company total control of the overall product quality. After extraction, Olive Oil is stored at its most valuable form (unfiltered) in stainless steel tanks with no oxygen content. It will be directly hand bottled only upon demand, ensuring deliverance to customers at its most natural state. Therefore, Olive Oil is treated as few times as possible, avoiding contagion and loss of quality due to many transfusions and transportation stages.
