Its exceptional taste, flavour and features are the results of our painstaking efforts during the whole production procedure; from cultivation to storage. To extract this amazing olive oil LIA combines traditional methods of cultivation with modern techniques. Olives are picked by hand, as the olives are going to the press within the same day of the harvest. LIA is produced using the cold extraction method, making sure all of the nutritional values as well as the taste and flavour properties of the fruit are transferred into the oil pulp.
The land producing LIA is Filiatra, a picturesque provincial town in Messinia, Greece - situated close to Mount Egaleo and cooled by the breeze of the Ionian sea - whose exceptional quality of soil interacts with the unique microclimate. All these factors contribute to olive cultivation in optimum environmental conditions.
The land of Messinia is both mythologically and historically tightly linked to two ancient Greek cultural centres; Nestor's Kingdom and Ancient Messene. These strong bonds with the past are a basic source of inspiration, in order to provide one of the fundamental goods of Messinian culture, its unique extra virgin olive oil.LIA's tree belongs to Koronèiki variety which is a native one in Greece. Its fruit ripens between November and December and produces olive oil of excellent quality whose special features comprise a combination of a fruity, bitter and pungent taste and flavour, apart from its exceptionally low acidity.
